The Alta Tuscia area is rich in the tradition of food and wine that blend the cultures of Lazio, Tuscany and Umbria. In particular, Acquapendente and Trevinano boast typical products that reflect a deep connection with the land

The municipality of Acquapendente, including Trevinano, is part of the "Colli Etruschi Viterbesi" DOC designation. This area has a long winemaking tradition, further enriched today by the recovery—thanks to the support of the Lazio Region and ARSIAL—of an ancient native grape variety unique to the Acquapendente and Trevinano area: the “greca puntinata” grape.
Among the typical local products that stand out are the Fagiolo del Purgatorio (Purgatory Bean), Acquapendente bread baked in wood-fired ovens, cured meats such as sausage and capocollo, game dishes featuring wild boar, hare and pheasant, cep mushrooms and black truffles, high-quality extra virgin olive oil, local DOC wines, traditional sweets, pecorino cheese, chestnut and acacia honey and fresh vegetables. All these products represent the essence of the culinary traditions of this land. Despite being a small village, Trevinano stands out for its rich food and wine traditions, deeply tied to the surrounding area.

Here are some of Trevinano’s main local products:

Extra Virgin Olive Oil
The extra virgin olive oil produced in Trevinano is one of its most prized products. The olives are grown on hillside terrain and harvested and processed using traditional methods. The resulting oil is of high quality, with a fruity flavour and hot and slightly bitter notes, ideal for seasoning traditional dishes or enjoying on a slice of bread.

Mushrooms and Truffles
The woods surrounding Trevinano are rich in cep mushrooms and truffles, particularly black truffles. These sought-after products are used to enhance local dishes such as pasta, risotto and meat-based main courses.

Game
Hunting is a well-established tradition in Trevinano and game is a central element of  local cuisine. Wild boar, roe deer, hare and pheasant are among the most commonly used meats to prepare hearty and tasty dishes, often accompanied by polenta or mushrooms.

Cheese and Dairy Products
High-quality cheese, especially pecorino, are produced in Trevinano and the surrounding areas. This cheese, with its intense and rich flavour, is often paired with local honey or jam and makes an excellent accompaniment to the wines from the area.

Legumes and Vegetables
The fertile lands around Trevinano are perfect for growing legumes and vegetables. Beans, particularly the Fagiolo del Purgatorio, are widely used in soups and stews. Vegetables such as cabbage, broccoli and potatoes are also used a lot in traditional recipes.

Honey
Honey produced in Trevinano is another local specialty, derived mainly from native flowers such as chestnut and acacia. This honey is often paired with cheese or used as an ingredient in traditional sweets.

Bread and Traditional Sweets
The bread made in Trevinano follows the tradition of the bread from Acquapendente, baked in wood-fired ovens with a crunchy crust and soft on the inside. Traditional desserts, though less common, are often tied to local festivals and typically made with honey and dried fruit.

Wine
Trevinano and the municipality of Acquapendente are part of the "Colli Etruschi Viterbesi" DOC designation. This territory, close to prestigious wine zones such as Montefiascone and Orvieto, produces high-quality wines, both red and white, that pair perfectly with the area’s traditional dishes. Additionally, the retrieval of the ancient native “greca puntinata” grape offers a new opportunity to further enhance the area’s winemaking identity.

Thus, despite its small size, Trevinano offers a variety of products that reflect the richness of the land and the culinary tradition of Alta Tuscia, thereby preserving customs and flavours greatly connected to the territory.
